I have prepared and taken lunchbox to work since I started work as a teacher many years ago. The reason for the very beginning is for saving some money. Then I realized it is healthier and safer because school canteen or small bistro might cook with more oil or more seasoning. Sometimes I would prepare a bit more food for dinner then leave one portion for the other day. However, I still wanted to obtain some vegetable for lunch but it’s better not leave cooked vegetable overnight in fridge. Thus, I have thought of quick lunchbox recipe that can be prepared within 15 minutes in the morning. Fried rice is one of my favourite lunchbox options for it requires no complicated ingredients and cooking technique. Some leftover meat or vegetable, and a bowl of leftover steamed rice would do. I would do the chop-up the night before. It only takes me 5 to 10 minutes to cook the other morning.
Though I don’t work outside regularly nowadays, I still keen on preparing lunchbox for my family to work. Under the recent influence of coronavirus, some may work from home. But for those still work in office or elsewhere but home, I suggest to take lunchbox and avoid eat with people unknown, in order to prevent possible droplet infection.
