No-Knead Potato Pitta Bread

I am those impatient type that when I feel like wanting something to eat, I want it right away. 80 percent of the recipes I have shared are quick and easy. I have never been good at baking since it needs time waiting the dough resting. However, I do challenge baking sometimes. This humble potato pitta bread is one of those I have tried and recreated many times and believe anyone has basic baking knowledge could succeed.

  • Ingredients –
    Strong flour/bread flour, about 300g;
    Potato, 1, about 300g;
    Egg, 1;
    Milk, 200ml;
    Salt, 1tsp;
    Yeast, 1tsp;
    Olive oil, 2tbsp.

How to do –
1. Potato peeled, cut to big chunks, poached in water or steamed till fully cooked;

2. Gradually mash it when hot, but don’t mash it smoothly, keep some tiny lumps, cool down till warm;

3. Add in salt, egg and yeast;

4. Milk rest in room temperature, add a little in, mix well with the mashed potato, then mix all milk in. Don’t pour in all milk otherwise it’s hard to mix with the potato. Make sure the mixture is warm otherwise the yeast won’t work;

5. Put in flour gradually. We need a soft dough that can be lifted but will stick to hand. Mix with a mixing spoon. The dough should be moist. Adjust with a little more flour or water. Then mix in 2tbsp of olive oil. Covered the dough with cling film and let it rest for 2 hour;

6. Sprinkle a thin layer of flour on the dough then punch to press the air;

7. Sprinkle some flour on the edge of the dough and carefully lift it out of the bowl, put it in the board. Separate the dough into 4 or 6 equal doughs. Try 6 the first time you make. Gently shape the doughs, then cover them with cling film, rest for 1 more hour;

8. Now they are ready for baking. You could bake them in oven but using a roomy non-stick pan is even easier. But it has to be roomy and with lid, especially when your dough is thick. Be careful your dough is moist so make sure to coat your fingers with flour. Lift a dough and carefully tear it to a pitta shape, put in the pan, spray some water on, lid covered. In medium heat or even medium low heat, bake it 5 to 10 minutes each side depends;

9. See you could bite potato chunks. There are many ways to have it. I like it just with cream cheese. Or to go with soup, curry, cashew nut dipping, make meat pocket, sandwich.
