Quick Okra and Egg Stirfry

Okra is one of my favourite vegetable. It can be prepared within minutes so I love to have it for a quick and nutritious meal. Okra is a good sauce of fiber, vitamin and antioxidant. Fresh and tender okra shouldn’t be too big, otherwise it would be too tough to chew, around 7-10cm is best. Look for firm and bright pods, a little brown marks on the tip are acceptable.

Ingredients – for 1 serving

  • Okra, about 200g
  • Egg, 2
  • Garlic, 2 cloves
  • Oyster sauce, 1tbsp

 

How to do –

  1. This is how I prepare okra for stirfry – Don’t trim off the stem end; Rub the pod gently in plenty of water, you may wear dishwashing gloves; bring a big pot of water to boil and add a pinch of salt, blanch the okra till they turn brighter green; immediately remove from hot water and rinse them in cold water; then you can trim off the stem end and slice the pod into bite size;
  2. Stirfry – Heat some oil in hot wok, scramble beaten egg, push aside; Stir-fry sliced garlic till fragrant; Transfer the okra into the wok and stir-fry for a minute; Drizzle a tablespoon of oyster sauce on and flip the ingredients; Serve hot right away.
