Chicken Wings in Sambal Ulek Terasi

I posted another recipe of King Trumpet Mushroom in Sambal Ulek Terasi before and friends asked me how to use this Indonesian traditional shrimp paste chili sauce with meat. So I think this easy recipe of chicken wing is a good example.
Sambal Ulek Terasi is made of fermented shrimp, chili, tomato, shallot, garlic and lemon grass. This aromatic sauce is good for marinating almost any meat. Simple cooking methods would be good enough, such as pan-fry, barbecue, grill or bake. In this recipe I would just do a quick pan-fry.

Ingredients –
Chicken mid wings, 10;
Sambal Ulek Terasi, 1tbsp. It’s a chili sauce so remember to have a taste beforehand and reduce the amount of it if you can’t bear too much spiciness;
Turmeric, 1/2tbsp;
Ketchup, 1tbsp;
Light soy sauce, 1tbsp;
Dark soy sauce, several drops;
Sugar, 1tbsp;
Ginger slice, 15g;
Paprika, for garnishing, optional.
How to do –
1. Give a few cuts on the wings for better marinating;

2. In a mixing bowl, put in all chicken and all seasoning ingredients, mix well and keep in fridge, let them marinade for at least one hour, longer the better;

3. Heat some oil in hot pan, and pan-fry the wings double-sided in medium heat. Lid on and let them cook in medium heat for five to ten minutes. Lid off and turn up the heat, pan-fry each side for several seconds till crispy. Keep an eye, after marinating, they would easily get burnt;

4. Sprinkle a nip of paprika and turmeric on top for garnishing.
