Pot Braised Chicken with Leek

This is a dish I like to have in winter, cooked and served in iron pot, warm and delicious. There aren’t not many ingredients in this recipe and it won’t take much time in cooking.

Serve 2
Ingredients –
Chicken, 500g, chopped in big pieces. I like them with bones. Any parts of chicken are good, breast, wing or thigh;
Leek, 1, chopped in big cubes;
Garlic, about 5 cloves;
Dry red chili, 5. I like it a little spicy. It’s optional;
Light soy sauce, 1/2 cup;
Dark soy sauce, 1tbsp;
Sugar, 2tbsp;
Chinese cooking rice wine, 1/2 cup.

How to do –
1. In a hot frying pan, put in the chicken and fry till golden and fat released. No need to put in any oil;
2. In a cast iron pot, put in the garlic, leek and chili and the chicken on top;

3. Put in all seasoning ingredients, bring to boil, lid on and cook in medium heat for 15 minutes;

4. Lid off, turn up the heat and reduce the sauce. Then serve right away, good to be with rice.
