Lemon Pearl Barley Tea


This is Job’s tears, or with another name, Chinese pearl barley. It’s a grain that Cantonese would use it in congee, soup or simply tea. According to Chinese medicine, pearl barley is good for promoting urination and removing heat, so it’s a common ingredient of summer drinks.

Simply simmer them in water till the water turns beige. Add fresh lemon or mint before drinking. I would like to squeeze juice of half a lemon for a regular glass and sweeten with syrup.

I have made a big jar, kept it in the fridge so as to take whenever I want.
