Wonton in Chili Sauce

I have made wontons or dumplings constantly and spicy wonton is always so handy for a quick lunch. Spicy wonton is a perfect combination of sweetness, spiciness, saltiness and sourness. I have always kept jars of red chili sauce home. Or it only takes a few minutes to make a quick and delicious spicy sauce.

Serve 2

Ingredients –
Chili flakes, 1tbsp;
Bay leaf, 1;
Star anise, 1;
Garlic, 2 cloves, finely chopped;
Black pepper, 1tsp;
Aged sorghum vinegar, 2tbsp;
Light soy sauce, 1tbsp
Brown sugar, 1tsp;
Oil, half cup;
A pinch of toasted sesame seed.

How to do –
1. Oil in hot saucepan, put in chili flakes, bay leaf and star anise, and fry them for about 2 minutes in medium heat till their flavour releases. Then pick the bay leaf and star anise out;
2. Put the chopped garlic in the hot oil and fry for one or two minutes till they turn crispy;
3. Add in all rest seasoning ingredients and turn off the heat.

Usually spicy wontons would be topped with crunchy peanut but I have quite a lot candied almond so I keep using them instead of peanut.
