Noddle in Chili Oil

红油拌面

Quick chili and garlicky noodle and super cool lemon ice tea at a very bright hot summer dusk before my yoga time.

Ingredients –
Noodle, 100g. It really doesn’t matter what type of noddle it is, even spaghetti is good enough;
Chili flakes, 1/2tbsp;
Bay leaf, 1;
Star anise, 1;
Garlic, 3 cloves, finely chopped;
Black pepper, 1tsp;
Aged sorghum vinegar, 2tbsp;
Light soy sauce, 1tbsp
Brown sugar, 1tsp;
Oil, half cup;
A pinch of toasted sesame seed.

How to do –
Poach the noodle in boiling water till they’re cooked;
Drain and rinse in cold water, then set aside in a big bowl;
Oil in hot saucepan, put in chili flakes, bay leaf and star anise, and fry them for about 2 minutes in medium heat till their flavour releases. Then pick the bay leaf and star anise out;
Put the chopped garlic in the hot oil and fry for one or two minutes till they turn crispy;
Add in all rest seasoning ingredients and turn off the heat;
Pour them immediately to the noodle, then mix!
